Unique Situation - Becoming a Host?

I am a (potential future/unofficial) host located in the United States. My husband and I have taken in many people over the years who have been in need - we’ve hosted a foreign exchange student, hosted a teen fresh out of the foster care system at 19, had a friend with an abusive family lived with us for several years rent free…it’s just something we enjoy doing and a way we like to give back.
Three weeks ago, we found out from a friend that someone she had met once or twice at her college campus was in need of a home. The girl in need was from Albania and was about to start her sophomore year at our local community college. The family (her relative and sponsor) that she was supposed to live with told her that they would no longer help her and dropped her off at a hotel, which she definitely could not afford.
We picked her up and took her home and we just fell in love. She is the sweetest and is constantly cleaning our home and helping with our young children as a way to show her gratitude (even though we’ve told her she doesn’t have to).
We were recently discussing how she could pursue her green card after she finishes her schooling, and we started discussing her being our au pair. She basically already does everything an au pair does (and more).
All of that background for a few questions:
We would need to wait until she is done with her schooling to move to an au pair relationship, correct?
Can she get her green card through being an au pair? If so, any guidance on where to research the cost and steps of this process would be greatly appreciated!
Any advice for a few rookies just starting to research this, given our current situation?
