Another discrepancy in the new documentary

One little discrepancy I noticed was when Casey said she was working under the table to have enough cash to leave without warning. During this time she lied about working at Universal Studios. If she really did make a significant amount of money from these bartending jobs, why did she need to steal money from Amy, or gas from the gas cans at Hopespring Drive?
