How do you make restaurant level breakfast?

I'm not going to lie I'm a pretty good cook when it comes to basic dinners, but my breakfast game is bad. No matter what I do, I cant seem to make a good breakfast. I go out to eat sometimes just to get the home fries and pancakes that they serve at restaurants, and when I try to make these at home they are shit. I recently bought a bag of pre cooked diced potatoes from Big Y, and tried to fry them up and they tasted like crap and were still hard and underdone until I cooked them more oil.

Pancakes I've never had good luck with either, I used pancake mix and will usually cut the recipe in half, but the cakes will either come out too doughy or overdone, not light and fluffy like pancakes you can eat at a restaurant.

I really wish I knew the hacks and techniques to getting good breakfast down, but I just can't seem to do it with my home kitchen.
