Why are food halls still being attempted?
Prefacing this post by saying that I mean this entirely without snark, but it really does seem like a doomed formula. My assumption is that these establishments are extremely expensive and take a ton of work to set up, but all I ever hear about is them closing at such a rate that I'm amazed there are any left.
Not that my opinion matters a whole lot, but I personally *never* feel like eating at a food hall because it sort of makes utilitarian all of the reasons I like to go out, and takes away the escapism of it all. The only reason I make that point is that I wonder, is there a large enough body of people who DO enjoy food halls and frequent them at a clip enough to make the concept sustainable? Again, not being snarky, I just legitimately am curious and want to know. It seems like such a capricious and unreliable venue for an industry already defined by stress and attrition. If this is dumb I apologize.
