Is my Goveee smart thero-hydrometer H5707 faulty?

It says in their marketing that the temperature updates every 2 seconds but I've put it in very extreme environments (e.g. the fridge and outside in the sun) and it takes a really long time to update. I need something that I can put in the back of the van to monitor the temperature as I transport foodstuffs that can melt if it gets too hot. If it takes minutes to update then it could already too late and I could ruin my cargo.
