Best chinese dishes on Honolulu that you can't find anywhere else

I am leaving Hawaii soon. Consider this is one of highest Asian percentage by population in all 50 states. And I am near China Town in Honolulu.

So what particular dishes from what restaurant do you recommend. I was watching some youtube shows, and all these regional dishes that I have never heard of before. Despite frequenting a lot of chinese restaurant on mainland USA. I would love trying something completely new and interesting. Before losing this chance.

Don't have to be Hawaii specific. Maybe rare chinese regional/provincial food. Heck if you have other East or South East Asian food recommendation. I take those as well.
