Any great restaurants in Tokyo I should be making a reservation in advance?

Going to Tokyo in January, wondering if I would be missing out on any good restaurant by not reserving in advance. If anyone knows great spots I should know let me know! We are looking for any type of restaurant, but also if anyone knows a good Omakase it would be great
