Winter Tires for ev6 Gt

Looks like I’m picking up an ev6 Gt this weekend! What do you guys recommend for winter tires and rims? Want to keep the cost down on rims and want to get the smallest wheels possible. I know the car comes with 21” wheels. What is the smallest size that will clear these large brakes? Want to potentially increase winter range with smaller wheels.
