Attempting vegan with a lifetime of bad habits
I'm trying to transition to vegan for my health, it's early and I'm tired. Bell pepper and onion mix is quickly becoming my daily "eggs". I use turmeric and paprika with garlic powder to season (same as "JUST Egg" at the store), fry in a tablespoon or two of oil, add whatever potato or leftover rice is on hand, usually a random leftover or canned bean, and salsa. It works as a filling 10-min breakfast. Sometimes brunch.
