Sourdough Bread Recipe

Ingredients: - 700 g warm water - 300 g sourdough starter - 1 kg bread flour - 25 g sea salt - Rice flour (for dusting)

Instructions:

  1. In a large mixing bowl, pour in 700 g of warm water. Add 300 g of sourdough starter and whisk together until fully combined and foamy.

  2. Add 1 kg of bread flour and 25 g of sea salt to the bowl. Mix until you achieve a thick but slightly sticky dough. It should hold together and not come apart if you perform a coil fold immediately.

  3. Scrape down the sides of the bowl with a dough scraper. Cover the bowl with a damp cloth and let it rest for 30 minutes.

  4. After the initial rest, perform your first set of stretch and folds. Repeat this process every 30 minutes for a total of four times.

  5. After the final stretch and fold, shape the dough and place it into a banneton. Cover it and let it rest overnight in the refrigerator.

  6. The next day, preheat your oven to 425°F (220°C) with the Dutch oven inside.

  7. Remove the dough from the banneton and dust the top with rice flour. Place a pizza stone in the oven to help prevent the bottom of the bread from burning.

  8. Carefully transfer the dough into the preheated Dutch oven. Bake with the lid on for 30 minutes. Remove the lid and continue to bake for an additional 10-15 minutes until the bread is golden brown and sounds hollow when tapped.

  9. Once baked, remove the bread from the oven and let it cool on a wire rack for at least one hour before slicing.
