Are smoked fall-off-the-bone ribs a myth?
Hi to all rib masters; I need your help! What’s the secret to legendary fall-off-the-bone ribs? I am beginning to think they are a myth, and people aren’t able to make them at home because every recipe I see promises it will fall off the bone, but it doesn’t. Has anyone been able to achieve that level of perfection smoking ribs at home? I just got a smoker, and I’m diving into ribs tomorrow. I’ve got a baby back cut, but I’m after something truly next level. Not the quick “party ribs” or just slathering them in sauce and smoking them for three hours. I have been there and done that)—I’m talking about ribs that melt off the bone like butter. The kind of ribs that make you stop mid-bite and appreciate the art of barbecue and the rub.
I grew up on amazing barbecue, and I’ve been spoiled—I won’t settle for anything less than fall-off-the-bone perfection. I know plenty of recipes promise tender or juicy, but if I can’t pick up the rib and watch the meat slide right off, it’s not what I’m looking for.
