Orange chicken: I followed this https://youtube.com/shorts/ksvkwhJn8Hw?si=WwwsxJofMcmImsjv
Chickpea salad: I soaked chickpeas overnight, next morning boiled them until soft. I sautéed some diced onions, garlic, and tomatoes. Added the chickpeas to it, some salt and pepper, and then mixed it all together in the pan itself. Got some plain nachos and crushed it on top of that. Some mint mayo on top, and some green veggies if you have!
Rajma: (I didn't follow it exactly, I pureed tomatoes and onion together) https://youtube.com/shorts/axAgiOdvF1Y?si=owpFjOT8ZcgYKvZJ
Satara tarri rassa chicken : https://youtu.be/wnRteDvYRHM?si=kVoivhk5yUFMhCNj
Chilli garlic noodles with fried egg: I boiled some normal spaghetti. Set it aside. In a pan, added some oil, added finely chopped garlic to it, some chilli powder, chilli flakes, chilli oil if you have, salt and pepper. Good toss, and then add the spaghetti in, let it all come together. Fry an egg, tada!
Chilli chicken: Wash and dice chicken into small to medium pieces. Marinate with chilli powder, salt and ginger garlic paste and set it aside. Cut onions, green chillis and capsicum. Toss it into a pan with oil, and let it cook properly, add soya sauce, and some sort of a hot sauce or schezwan chutney to it, add your chicken. Good toss, keep tasting after its cooked, you'll know what to add to adjust taste.

Bruschetta: Honestly I just made it without a recipe. Made some pesto with basil, mint, garlic, olive oil, peanuts, cheese, coriander. Spread it on toasted bread, and added some cheese, diced tomatoes and onions on that!
A few other recipes that are easy to make and take less effort:
Besan chhila: Just dice some onions, add some green chillis, some diced tomatoes, salt, a lil bit of chilli powder, jeera, ajwain and then besan and coriander. Mix it together and add water to the point that it's a watery slurry. Some oil onto the pan, add the batter, let it cook and them flip!
Rava dosa: Get 2 parts rava, one part rice flour or maida, one part normal atta. Add ajwain, jeera, salt, some pepper, and diced onions, coriander. Add water and make it a runny batter. Pour onto a really hot oiled pan, flip when crispy.
Mushroom rice (sasta risotto): Wash rice and keep. Chop garlic, onions, mushrooms. Toss into a pan with oil, Sautee it well. Add your rice and Sautee it too. Add water, if 1 part rice then 2 parts water. Add chilli powder, some garam masala, salt to it. Put a lid on it and let it cook. Halfway through, add some cheese on top and let it cook the rest of the way.
