What happens when you pay off your mortgage - Scotland if it's different

Just a random question I have, I am not at this point yet, so just curious. Not expecting a t-shirt sent to me or anything, but what actually happens when you clear your mortgage? Do you need to do anything or do you just not have a mortgage?
