i am confused about the hex messages

So, for example, if I'm talking to someone and there are two options to start a chat, I'm guessing that both choices will lead to completely different conversations. If I pick one for the day, does that mean I can't pick the other chat, or will I receive that option again later? I think I made a mistake by choosing a chat I didn't care about, and now I'm worried I might have messed up my chance to romance Eleanor.
