I'm powerless against Ottomans

If you are not an agressif player, how do you deal against this free army ? I mean, I feel like if I cant destroy his military school early in the game, I can't face his army and it's even worse when I try a fast 2nd TC.

I tried with chinese, HRE and French. I know that is possible but I am obviously missing something...
