Colorado River with pregnant wife

Question for the community. My wife and I are going on a canoe trip down the Colorado River getting dropped off at the Hoover dam in October. She'll be 4 months by then. The trip was planned before we found out about the pregnancy and was cleared by the doctor.
The question is how do we (myself) pack and carry things down. We're both avid backpackers and usually go minimal. We'll probably have another of the group's kids, and they're stuff with us, in our canoe.
I'm thinking a furniture dolly to help bring things down. I want to pre marinade and freeze steaks for a night with some instant mashed potatoes and asparagus. We usually get blocks of ice or dry ice with us but we'll be spending the night before in a hotel in Boulder City. It's only 2 nights and short walk to the campsite.
So 2 over 50 liter backpacks and a cooler, maybe 2. A Nemo Aroura 2p tent, sleeping pads and bags. Thinking a mini weber or just a cast iron griddle and charcoal (dig a hole and cook on the griddle). Anyone been in this same trip? We did it last year and we were the first one in, last to leave. Some tips would be appreciated.
