First Cruise! Advice needed

In February I will be going on my first cruise, the 10 night ultimate Southern Caribbean on the Celebrity Beyond. I would love some advice on excursions! Is it best to do it though Celebrity or is going with an outside company normally OK? Would you recommend doing excursions at every stop or is it better to just walk around near by the port?
