how do I end a situationship?

I (32 F) have been seeing this (29 M) for three months. It’s a very intense connection, like I’m talking instant soul recognition and finishing each other’s sentences type of thing. Going into it, we were just looking to hook up, as we’re both getting over our past relationship and were not looking for anything serious.

But we kept hanging out, texting everyday. Eventually it wasn’t just sex but hours spent together discussing things that we’ve never told anyone else about (at least that’s what he told me). We did relationship things, we kissed at midnight on new years, we have become so close so quickly and it’s been such a rollercoaster.

It’s been three months of such intense highs and crashing lows. I’ve obviously developed deep feelings for this person but they’ve expressed that they can’t be exclusive with me. I’m not even asking for a relationship, just exclusive dating essentially. They can’t give that to me, despite literally treating me like their girlfriend.

How do I end things? should I end things? I still have his shirt, so I might have to see him in person but that might be a lot harder than just sending a text. Any advice would be greatly appreciated.
