Earthbound Minecraft?

Does anyone here have the ability to host a PC Java Minecraft server where we build the world of Earthbound? We could go town by town, start a Discord, and work together in creative to make the whole world. We could even use mods and alternate dimensions like The End to make places like Moonside.

I would host a server myself if I could. I tried before but I just couldn't get it to stay running or update it successfully.
