Developing Celiac?? Fucked up by a hamburger bun

My food sensitivities have changed over the years. I cut dairy (mostly) after having kids 11 years ago, but make allowances for whatever might be in a baked item or cheese on a slice of pizza. Last year I cut animal products almost exclusively due to inflammation. Chicken and eggs being the main culprits of stomach pain. I’ve avoided gluten in the past because it can sometimes hurt my stomach and oftentimes causes me to burp and bloat.

Well, a few nights ago we were out of a gf hamburger bun so I ate a regular bun thinking it might cause some bloating but nothing too major. I was so so wrong. Within a couple hours, I was puking. The whole next day I was laid out in bed. Incredibly sore joints, body aches, fatigue, zero appetite the whole day. No fever, no cough—this wasn’t a cold. The next day I was back to peak performance, hit the gym, eased back into eating, still no cold symptoms.

So it was definitely the bun. I had also dipped Brussels sprouts in a dip with some flour and cornstarch and used gf panko to coat.

I normally am fine to have gluten in small doses. Just the week prior I had some vegan chocolate cake. A month ago I had some flatbread from a restaurant that I shared as an appetizer. Burping and not feeling 100% the best but nothing like this.

So, I’m wondering if anyone can relate? Are there types of gluten you could have and then it escalated? Would you get tested for Celiac after a reaction like that? I’m scared to try anything with gluten now!
