Bread, when do you personally start on botos?

I'm doing my first bread shift without a trainer soon and I've got the bread side down, but I've only seen the botos done once and I've forgotten what she said about when she does them because it was a few weeks ago. Looking for ideas and suggestions of what works for you! Thanks!

(And yes, I know I can ask a manager and I will if I need to! But I'd prefer not to need to if possible.)
