Possible to politely state preference for low touch service ?

I am a European in a North American city and the service is extremely annoying when I’m trying to enjoy a nice meal out. I’m sure it’s just a cultural difference but I absolutely hate being interrupted multiple times for a check in how we are getting on with meal and in particular I eat faster than my partner and then they rudely interrupt to take away my plate leaving my partner eating in front of me. I just want to linger over a meal, maybe enjoy an aperitif and share a starter and have a nicely paced meal and perhaps linger over a drink or wine or dessert. I’m not talking multiple hours just please leave me alone for a bit.

Can I just ask “I would prefer low touch service tonight if that is okay with you, if I need anything extra I’ll ask, thanks” ?
