Cold weather makes me crave smoked salmon

Dry brined 26 hrs. Light brown sugar, kosher salt, and fresh dill. Let the kettle climb slowly to 225 and kept it there for another couple hours. First time using apple wood for salmon and liked the results quite a bit.

Couldn’t find a large filet so I did my best to get similar sized little ones and mush them together on the cooker to avoid drying out too quick.
