Unraid with Intel's 7th Gen, or higher?

I'm planning on building my first NAS with unraid, and the plan is to outfit it with 6 total drives initially, using only the SATA ports available on the board I'll get, then if I'd need more storage it'll be through a HBA.

I was planning on gettting the most reasonable Intel chip with the UHD 630 iGPU for transcoding, which currently seems to be the i7 7700, but I did wonder, would it better if I went with a newer generation with more cores/threads, or would the 8 threads of the 7700 be enough?

Say something like the Intel 8700 or 10400, both of which would be 6c/12t, and still give me the UHD 630.

I plan on running shares from the array, Immich, and transcoding for the backed up video on the array.
